Poblano Scallops

1 Tbsp olive oil
1 lb scallops
1/2 tsp chili powder
1/2 tsp cumin
1 small poblano pepper, diced small
1 Cup tomatoes, diced
1 tsp garlic, chopped
1/4 cup white wine
2 Tbsp lime juice
1 Tbsp fresh cilantro, chopped
Salt & pepper to taste

1. In a large sauté pan over medium-high heat, add olive oil.
2. Season scallops with chili powder and cumin.
3. When olive oil is hot, place scallops into sauté pan and sauté for 2 minutes on each side.
4. Add chopped poblano pepper, tomatoes, garlic and sauté for two minutes; add white wine to deglaze the pan.
5. Add lime juice and cilantro.
6. Serve & Enjoy!
